The culinary heritage of the Alps: a “poor people’s” cuisine, is rich in the flavours of nature – born of pure necessity. The main focus of our Mediterranean-themed Alpine cuisine is the use of local and seasonal products: meat from local farms and traditional specialities. Potatoes, beetroot, cabbage, and grains from Val Pusteria. Healthy products from our farmers, which we prepare freshly and gently with many rediscovered ingredients from the past, without artificial flavour enhancers or preservatives.
For seasoning, we use herbs and berries from our garden, the meadows, and the forest – fresh in summer and preserved for winter! Taste the flavours of the Dolomites.
